Step 1: Prepare the Fish

Step 2: Prepare the Batter
- In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, paprika, chili powder, cumin, garlic powder, onion powder, salt, and black pepper.
- Slowly add the cold sparkling water or light beer while whisking until the batter becomes smooth. The batter should be thick enough to coat the fish while still allowing excess batter to drip away.
Step 3: Make the Creamy Baja Sauce
- In a small bowl, combine the mayonnaise, sour cream, lime juice, hot sauce, garlic powder, smoked paprika, cumin, salt, and black pepper.
- Whisk until smooth and creamy. Taste and adjust the seasoning as desired. Cover and refrigerate the sauce while preparing the remaining ingredients.
Step 4: Prepare the Fresh Toppings
- Combine the shredded green cabbage and purple cabbage in a bowl.
- Thinly slice the red onion and jalapeño, if using. Slice the avocado shortly before serving to maintain its fresh appearance. Wash and dry the cilantro, then cut the limes into wedges.
Step 5: Heat the Oil
- Pour enough vegetable oil into a deep skillet or heavy-bottomed pan for shallow frying.
- Heat the oil to approximately 350°F to 375°F. Maintaining the correct temperature is important for achieving crispy fish without excessive oil absorption.
Step 6: Coat and Fry the Fish
- Dip each piece of fish into the prepared batter, allowing any excess batter to drip back into the bowl.
- Carefully place the battered fish into the hot oil. Fry in small batches for approximately 3 to 5 minutes, turning as needed, until the fish is golden brown, crispy, and cooked through.
- Do not overcrowd the pan.

Step 7: Warm the Tortillas
