Method
Step 1: Prepare the Beef
- If desired, place the beef in the freezer for 15 to 20 minutes to make slicing easier. Slice the beef thinly against the grain.
- Place the sliced beef in a bowl and toss it with 1 tablespoon soy sauce and 1 tablespoon cornstarch until lightly coated. Set aside while preparing the remaining ingredients.
Step 2: Prepare the Broccoli
- Wash the broccoli and cut it into bite-sized florets.
- Heat a large skillet or wok over medium-high heat. Add 2 to 3 tablespoons of water and the broccoli. Cover briefly and steam for approximately 3 to 4 minutes, or until the broccoli becomes bright green and crisp-tender.
- Remove the broccoli from the pan and set aside.
Step 3: Make the Sauce
- In a medium bowl, whisk together the low-sodium soy sauce, beef broth or water, oyster sauce, brown sugar, sesame oil, cornstarch, minced garlic, and fresh ginger.
- Whisk until the cornstarch is completely dissolved and the sauce is smooth.
Step 4: Cook the Beef
- Heat the skillet or wok over medium-high to high heat. Add the neutral cooking oil.
- Cook the beef in batches to avoid overcrowding the pan. Add half of the beef in a single layer and cook until lightly browned and nearly cooked through.
- Transfer the cooked beef to a plate and repeat with the remaining beef.
Step 5: Combine the Ingredients
- Return all of the cooked beef to the skillet. Add the steamed broccoli.
- Whisk the sauce once more, then pour it into the skillet. Stir continuously as the sauce heats and thickens.
- Cook for approximately 2 to 3 minutes, or until the sauce becomes glossy and evenly coats the beef and broccoli.
Step 6: Serve
- Remove the Beef and Broccoli from the heat and serve immediately.
- Enjoy it on its own or serve it with steamed white rice, brown rice, noodles, or cauliflower rice.
Notes
Slice against the grain: This is essential for tender, easy-to-chew beef.
Do not overcrowd the pan: Cook the beef in batches for better browning and flavor.
Keep the broccoli crisp-tender: Avoid overcooking to maintain its bright color and fresh texture.
Whisk the sauce before adding: Cornstarch settles at the bottom, so mix the sauce again before pouring it into the hot skillet.
Adjust the sauce: Add more garlic, ginger, brown sugar, or seasonings according to your taste.
Gluten-free option: Use certified gluten-free soy sauce or tamari and gluten-free oyster sauce.
Low-carb option: Reduce or omit the brown sugar and use less cornstarch.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
Reheating: Reheat gently in a skillet with a small splash of water or beef broth to loosen the sauce.
