- Prepare the raspberry mixture: Add the fresh raspberries to a small bowl or shaker and gently muddle until the berries release their juices and break down.
- Strain the raspberries: Pour the crushed raspberries through a fine-mesh strainer, pressing gently with a spoon to extract as much juice as possible. Discard the seeds and pulp or reserve a little pulp if you prefer a more rustic texture.
- Prepare the glasses: Run a lime wedge around the rim of each margarita glass. Dip the rims into salt, sugar, or a combination of sugar and finely crushed freeze-dried raspberries. Chill the glasses for about 5 minutes if desired.
- Combine the ingredients: Fill a cocktail shaker with ice. Add the strained raspberry juice, tequila, fresh lime juice, orange liqueur, and 1 oz of simple syrup.
- Shake: Secure the shaker and shake vigorously for 10–15 seconds, until the outside becomes very cold.
- Taste and adjust: Taste a small amount of the cocktail. Add a little more simple syrup if it is too tart, or additional lime juice if it is too sweet.
- Strain and serve: Strain the margarita into the prepared glasses. Serve straight up or over fresh ice.
- Garnish: Finish each drink with fresh raspberries and a lime wedge. Add a small mint sprig if desired.
Notes
Fresh lime juice is highly recommended for the brightest, freshest flavor.
Adjust the simple syrup according to the sweetness of your raspberries and your personal preference.
For a smoother margarita, strain the raspberry mixture thoroughly to remove the seeds.
A blanco tequila works particularly well because its clean flavor allows the raspberry and lime to shine.
For a sugar-free or lower-carb version,
replace the simple syrup with a suitable low-carb sweetener.
For a spicy raspberry margarita,
muddle 2–3 thin jalapeño slices with the raspberries before shaking.
For a frozen raspberry margarita,
blend the ingredients with approximately 2 cups of ice until smooth.
For entertaining,
the raspberry mixture and simple syrup can be prepared ahead and refrigerated separately. Assemble the margaritas shortly before serving for the freshest flavor.
