Ingredients

For the Chicken
  • 2 large boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Wraps
  • 4 large flour tortillas
  • 4 cups chopped romaine lettuce
  • 1/2 cup Caesar dressing
  • 1/2 cup freshly shaved or grated Parmesan cheese
  • 1/2 cup crunchy croutons roughly broken
  • 1 tablespoon fresh lemon juice optional

Equipment

  • Large skillet or grill pan
  • Cutting board
  • Chef's knife
  • Meat thermometer
  • Mixing bowl
  • Tongs
  • Measuring spoons
  • Small spoon or spatula
  • Paper towels

Method

  1. Prepare the chicken: Pat the chicken breasts dry. If they are very thick, gently pound them to an even thickness. Rub both sides with olive oil and season with garlic powder, paprika, salt, and black pepper.
  2. Cook the chicken: Heat a skillet or grill pan over medium-high heat. Cook the chicken for several minutes on each side until golden brown and fully cooked. The thickest part should reach 165°F (74°C).
  3. Rest and slice: Transfer the chicken to a cutting board and let it rest for about 5 minutes. Slice it into thin strips or bite-size pieces.
  4. Prepare the Caesar filling: Add the chopped romaine to a large bowl. Add Caesar dressing, Parmesan, and optional lemon juice. Toss gently until the lettuce is lightly coated.
  5. Add chicken and croutons: Fold the sliced chicken into the Caesar mixture. Add the croutons last so they retain as much crunch as possible.
  6. Warm the tortillas: Warm each tortilla briefly in a dry skillet or microwave until soft and flexible.
  7. Assemble: Place the filling slightly below the center of each tortilla, leaving room around the edges. Fold the bottom edge over the filling, fold in the sides, and roll tightly until completely enclosed.
  8. Optional toasting: For a lightly crisp exterior, place each finished wrap seam-side down in a dry skillet over medium heat and toast briefly on both sides.
  9. Serve: Slice the wraps diagonally and serve immediately for the best combination of crisp lettuce, crunchy croutons, creamy dressing, and juicy chicken.

Notes

Dry the romaine thoroughly before mixing it with the dressing to prevent soggy wraps.
Do not add too much Caesar dressing; enough to lightly coat the lettuce is ideal.
Add croutons shortly before serving to preserve their crunch.
Let the chicken rest before slicing so it stays juicy.
Large, soft tortillas are easiest to roll without tearing.
For meal prep, store the chicken, lettuce, dressing, Parmesan, croutons, and tortillas separately and assemble shortly before serving.
For a gluten-free version, use certified gluten-free tortillas, croutons, and Caesar dressing.
For a lower-carb version, substitute a suitable low-carb tortilla and check the carbohydrate content of the dressing and other packaged ingredients.
