Ingredients

  • 1 pound ground beef
  • 1 cup refried beans
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 cup Fritos corn chips
  • 1/2 cup taco sauce
  • 2 tablespoons taco seasoning or to taste
  • 1 cup finely shredded lettuce
  • 1/2 cup finely diced tomatoes
  • 2 tablespoons water or as needed for cooking the beef

Equipment

  • Large skillet
  • Small saucepan
  • Wooden spoon or spatula
  • Cutting board
  • Chef's knife
  • Measuring spoons
  • Spoon for spreading beans
  • Large plate or clean work surface

Method

  1. Cook the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and no longer pink. Drain excess grease if necessary.
  2. Season the beef: Add the taco seasoning and water. Stir well and reduce the heat to medium-low. Simmer for 3–5 minutes, stirring occasionally, until the beef is well coated and most of the excess liquid has cooked away.
  3. Warm the beans: Place the refried beans in a small saucepan over low heat. Stir occasionally until warmed through and smooth. If needed, add a small splash of water to make them easier to spread.
  4. Prepare the vegetables: Finely shred the lettuce and dice the tomatoes. Drain excess liquid from the tomatoes to prevent the burritos from becoming soggy.
  5. Warm the tortillas: Heat the flour tortillas briefly in a dry skillet until soft and flexible. Do not overheat or crisp them.
  6. Assemble: Place one warm tortilla on a flat surface. Spread approximately 1/4 cup of refried beans down the center, leaving space around the edges.
  7. Add the beef: Spoon approximately 1/4 of the seasoned ground beef over the beans.
  8. Add cheese and sauce: Sprinkle with shredded cheddar cheese and drizzle with taco sauce.
  9. Add the crunch: Add a generous handful of Fritos corn chips over the filling. Add a small amount of shredded lettuce and diced tomatoes if desired.
  10. Roll the burrito: Fold the left and right sides inward. Fold the bottom of the tortilla over the filling, then roll firmly upward until the burrito is completely enclosed.
  11. Optional toasting: For a lightly crisp exterior, place the burrito seam-side down in a dry skillet over medium heat. Toast for 1–2 minutes per side until lightly golden.
  12. Serve: Serve immediately while the filling is warm and the Fritos are still crunchy.

Notes

Add the Fritos immediately before rolling for the best crunch.
Avoid overfilling the tortillas, as this can make them difficult to fold and cause them to tear.
Freshly shredded cheddar melts especially well in this recipe.
For a spicier burrito, use hot taco sauce or add diced jalapeños.
For a vegetarian version, replace the ground beef with seasoned black beans, additional refried beans, or a plant-based meat alternative.
If preparing components ahead of time, store the beef and beans separately and assemble the burritos just before serving.
For the closest fast-food-inspired texture, serve the burritos immediately after assembly.
