- Prepare the chicken: Pat the chicken thighs dry with paper towels. Season both sides with salt, black pepper, and smoked paprika.
- Make the BBQ sauce mixture: In a bowl, combine the barbecue sauce, brown sugar, yellow mustard, Worcestershire sauce, apple cider vinegar, minced garlic, and chopped onion. Stir until well combined.
- Optional searing: Heat olive oil in a large skillet over medium-high heat. Sear the seasoned chicken thighs for 2–3 minutes per side until lightly browned. Do not cook them through; this step is simply for additional flavor.
- Add chicken to the Crock Pot: Arrange the chicken thighs in an even layer in the slow cooker. Pour the BBQ sauce mixture over the chicken, making sure each piece is generously coated.
- Slow cook: Cover and cook on LOW for 5–6 hours or HIGH for 2½–3½ hours, depending on the size of the chicken and your slow cooker. The chicken should reach an internal temperature of at least 165°F (74°C).
- Thicken the sauce if needed: If the sauce is thinner than desired, remove the chicken and simmer the sauce separately in a saucepan until it reduces and thickens.
- Optional caramelized finish: Transfer the cooked chicken to a baking sheet, brush with additional BBQ sauce, and broil for a few minutes until the sauce becomes glossy, sticky, and lightly caramelized. Watch carefully to prevent burning.
- Rest and serve: Allow the chicken to rest for a few minutes, garnish with fresh parsley or green onions if desired, and serve hot with your favorite BBQ side dishes.
Notes
Chicken thighs: Bone-in thighs provide excellent flavor and remain tender during slow cooking. Boneless thighs can also be used but may cook faster.
BBQ sauce: Use your favorite smoky, sweet, spicy, honey, or tangy BBQ sauce. The sauce you choose will significantly influence the final flavor.
Sweetness: If your BBQ sauce is already very sweet, reduce or omit the brown sugar.
Gluten-free: Use certified gluten-free BBQ sauce and verify the labels of Worcestershire sauce and other packaged ingredients.
Lower-carb option: Use a sugar-free or low-carb BBQ sauce and omit the brown sugar.
Extra heat: Add cayenne pepper, crushed red pepper flakes, chipotle powder, or hot sauce.
Best texture: Searing before slow cooking and broiling the chicken afterward are optional, but both steps add excellent flavor, color, and caramelization.
