Ingredients
  

  • 2 –3 pounds boneless skinless chicken breasts or chicken thighs
  • –2 cups barbecue sauce
  • 1 medium onion thinly sliced or finely chopped
  • 3 –4 garlic cloves minced
  • 1 –2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon paprika
  • ½ –1 teaspoon chili powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt or to taste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar optional
  • Additional barbecue sauce if needed for serving

Method
 

Step 1: Prepare the Chicken
  1. Trim any excess fat from the chicken if necessary and pat it dry with paper towels. Place the chicken breasts or chicken thighs into the bottom of the Crock Pot.
Step 2: Make the BBQ Sauce Mixture
  1. In a medium mixing bowl, combine the barbecue sauce, onion, minced garlic, brown sugar, smoked paprika, paprika, chili powder, black pepper, salt, Worcestershire sauce, and apple cider vinegar if using.
  2. Stir everything together until well combined.
Step 3: Add the Sauce
  1. Pour the prepared barbecue sauce mixture evenly over the chicken. Gently turn the chicken if necessary to ensure it is coated with the sauce.
Step 4: Slow Cook the Chicken
  1. Cover the Crock Pot with the lid and cook:
  2. On Low: 5–6 hours
  3. On High: 3–4 hours
  4. The chicken is ready when it is fully cooked, tender, and easy to shred. For food safety, the internal temperature should reach 165°F (74°C).
Step 5: Shred the Chicken
  1. Carefully remove the cooked chicken from the Crock Pot and place it on a cutting board or large plate.
  2. Use two forks to shred the chicken into your preferred size.
Step 6: Return Chicken to the Sauce
  1. Return the shredded chicken to the Crock Pot and stir it thoroughly into the barbecue sauce.
  2. Allow the chicken to sit in the warm sauce for approximately 10–15 minutes so it can absorb additional flavor.
Step 7: Serve and Enjoy
