Method
- Preheat the oven: Preheat the oven to 425°F (220°C). For extra browning, place the empty baking sheet in the oven while it heats.
- Prepare the broccoli: Wash the broccoli thoroughly and dry it very well using clean kitchen towels or paper towels. Cut the broccoli into evenly sized florets, keeping some tender stems if desired.
- Season: Add the broccoli to a large mixing bowl. Pour over the olive oil and add the minced garlic, salt, black pepper, Italian seasoning, and red pepper flakes if using. Toss thoroughly until the florets are evenly coated.
- Arrange on the baking sheet: Spread the broccoli across the baking sheet in a single layer. Avoid overcrowding the pan. For especially caramelized edges, place some florets cut-side down.
- Roast: Roast for 15–20 minutes, turning the broccoli approximately halfway through cooking. Continue roasting until the florets are tender and the edges are deeply golden brown and slightly crisp.
- Add Parmesan: Sprinkle the freshly grated Parmesan evenly over the roasted broccoli. Return the baking sheet to the oven for another 2–4 minutes, or until the cheese is melted and lightly golden.
- Finish and serve: Remove from the oven and allow the broccoli to rest briefly. Taste and adjust the seasoning if needed. Finish with fresh lemon juice, lemon zest, parsley, or an additional sprinkle of Parmesan if desired. Serve immediately.
Notes
Dry the broccoli well: Excess water can cause the broccoli to steam instead of roast, preventing crispy, caramelized edges.
Do not overcrowd the pan: Use two baking sheets if necessary. Plenty of space allows hot air to circulate and encourages browning.
Fresh Parmesan is best: Finely grated Parmesan melts and coats the broccoli more evenly than many pre-shredded varieties.
Watch the garlic: Finely minced garlic can burn at high temperatures. If your garlic browns too quickly, add it during the later portion of roasting.
For extra crispiness: Roast the broccoli cut-side down and avoid turning it too frequently.
For a brighter flavor: Add fresh lemon juice and zest immediately after roasting.
Storage: Refrigerate leftovers in an airtight container for up to 3–4 days. Reheat in an oven, toaster oven, or air fryer to help restore some of the crisp texture.
