Method
Make the Pastry Dough
- In a large bowl, combine the flour, granulated sugar, and salt. Add the cold cubed butter and cut it into the flour using a pastry cutter or your fingertips until the mixture resembles coarse crumbs with a few small pieces of butter remaining.
- Gradually add the ice water, one tablespoon at a time, mixing just until the dough begins to hold together. Do not overmix.
- Shape the dough into a disk, wrap it tightly, and refrigerate for 30 minutes.
Shape the Mini Crusts
- Lightly flour your work surface and roll the chilled dough to an even thickness. Cut out 12 circles large enough to fit into your muffin pan or mini pie molds.
- Gently press each pastry circle into the prepared cavities without stretching the dough. Trim any excess pastry and lightly prick the bottoms with a fork.
- For the best results, refrigerate the shaped crusts for another 10–15 minutes if the dough has become soft.
Prepare the Pumpkin Filling
- In a large bowl, whisk together the pumpkin puree, brown sugar, granulated sugar, cinnamon, ginger, nutmeg, and salt.
- Add the eggs and whisk gently until combined. Slowly add the heavy cream and vanilla extract, mixing until the filling is smooth and evenly blended.
- Avoid vigorous whisking, as incorporating too much air can cause bubbles or cracks in the finished custard.
Fill the Crusts
- Arrange the prepared pastry shells on a baking sheet. Carefully divide the pumpkin filling between the crusts, leaving a little room at the top of each one.
- Do not overfill the shells because the custard may expand slightly during baking.
Bake
- Preheat the oven to 375°F (190°C).
- Bake the mini pies for approximately 25–30 minutes, or until the crusts are golden brown and the pumpkin filling is mostly set.
- The centers should still have a very slight jiggle when gently moved. Avoid baking until the filling is completely firm, as it will continue setting from residual heat after leaving the oven.
