Method
- Blend the watermelon: Add the cubed watermelon to a blender and blend until completely smooth. If you prefer a very silky margarita, strain the puree through a fine-mesh strainer.
- Taste the watermelon: Check the natural sweetness of the watermelon before adding the agave. Very ripe watermelon may require only a small amount of additional sweetener.
- Prepare the glasses: Run a lime wedge around the rims of two glasses. Dip the rims into coarse margarita salt to create an even salted rim. Chill the glasses for a few minutes if desired.
- Combine the ingredients: Add the watermelon puree, tequila, fresh lime juice, and 1 tablespoon of agave syrup to a cocktail shaker.
- Add ice and shake: Fill the shaker with ice, secure the lid, and shake vigorously for 15–20 seconds until thoroughly chilled.
- Adjust the flavor: Taste the mixture. Add more agave if it needs sweetness or a little extra lime juice if you prefer a brighter, more tart flavor.
- Strain and serve: Strain the margarita into the prepared glasses over fresh ice, or serve it chilled without additional ice.
- Garnish: Finish with a fresh watermelon wedge, lime wedge, and a few mint leaves if desired. Serve immediately.
Notes
Use fresh, ripe watermelon for the sweetest and most flavorful margarita.
Start with less agave and add more only if needed because watermelon naturally varies in sweetness.
Freshly squeezed lime juice gives the cocktail a much brighter flavor than bottled lime juice.
For a spicy watermelon margarita, add a few thin jalapeño slices to the shaker before shaking.
For a frozen watermelon margarita, use frozen watermelon cubes and blend the ingredients with ice until smooth and slushy.
For a lighter cocktail, top the finished margarita with a small splash of chilled sparkling water.
To prepare for a party, combine the watermelon puree, tequila, lime juice, and agave in a pitcher and refrigerate until ready to serve. Add ice to individual glasses rather than the pitcher to prevent excessive dilution.
For the best flavor and texture, serve immediately after preparation.
