Method
- Preheat the oven to 425°F (220°C).
- Remove the chicken from the refrigerator about 30–45 minutes before cooking.
- Pat the chicken completely dry with paper towels.
- In a small bowl, combine softened butter, olive oil, minced garlic, parsley, salt, pepper, paprika, onion powder, and garlic powder.
- Carefully loosen the skin over the breast and spread half of the herb butter underneath.
- Rub the remaining butter mixture over the outside of the chicken.
- Stuff the cavity with the lemon halves, rosemary, thyme, onion quarters, and halved garlic bulb.
- Tie the legs together with kitchen twine and tuck the wing tips underneath the chicken.
- Arrange the vegetables in a roasting pan and place the chicken on a roasting rack or directly on top of the vegetables.
- Roast at 425°F for 20 minutes.
- Reduce the oven temperature to 375°F (190°C) and continue roasting for 60–75 minutes, basting every 20–25 minutes with the pan juices.
- Cook until the breast reaches 165°F (74°C) and the thigh reaches 175°F (79°C).
- Remove the chicken from the oven and let it rest for 15–20 minutes before carving.
- Serve with the roasted vegetables and homemade gravy if desired.
