Step 1: Prepare the Chicken
- Cook the chicken breasts using your preferred method, such as poaching, baking, grilling, or pan-searing. Once fully cooked, allow the chicken to cool slightly and shred it using two forks. You can also use cooked leftover chicken or rotisserie chicken to save time.
Step 2: Cook the Onion and Garlic
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft and translucent, stirring occasionally. Add the minced garlic and cook for about 30 seconds until fragrant.
Step 3: Season the Chicken Filling
- Add the shredded chicken to the skillet. Stir in the ground cumin, chili powder, smoked paprika, salt, and black pepper.
- If using black beans or corn, add them at this stage and mix well.
Step 4: Add Sauce to the Filling
- Pour ½ cup of red enchilada sauce over the chicken mixture. Stir until everything is lightly coated and cook for 2 to 3 minutes over low heat.
- Remove the skillet from the heat and allow the filling to cool slightly.
Step 5: Prepare the Baking Dish
- Preheat the oven to 375°F (190°C).
- Lightly grease a baking dish with olive oil or cooking spray. Spread a thin layer of enchilada sauce across the bottom of the dish.
Step 6: Warm the Tortillas
- Warm the tortillas briefly in a dry skillet or microwave until soft and flexible.
- If using corn tortillas, warming them is especially important because it helps prevent cracking while rolling.
Step 7: Fill and Roll the Enchiladas
- Place a tortilla on a clean work surface. Add a generous spoonful of the chicken filling to the center and sprinkle with a little shredded cheese, if desired.
- Roll the tortilla tightly around the filling and place it seam-side down in the prepared baking dish.
- Repeat with the remaining tortillas and filling.
Step 8: Add the Enchilada Sauce
- Pour the remaining enchilada sauce evenly over the rolled tortillas. Make sure they are well coated without adding so much sauce that they become overly soggy.
Step 9: Add the Cheese
- Sprinkle the shredded cheese evenly over the top of the enchiladas.
- For extra flavor, use a combination of cheddar and Monterey Jack cheese.
Step 10: Bake
- Place the baking dish in the preheated oven and bake for 20 to 25 minutes, or until the sauce is bubbling and the cheese has completely melted.
- For a lightly golden cheese topping, broil the enchiladas for 1 to 2 minutes at the end of baking. Watch carefully to prevent burning.
Step 11: Rest and Serve
- Remove the Chicken Enchiladas from the oven and allow them to rest for about 5 minutes before serving.
- Garnish with fresh cilantro, avocado, sour cream, jalapeños, tomatoes, red onion, or lime wedges as desired.
- Serve warm and enjoy.
