- Prepare the shrimp: Peel and devein the shrimp if necessary. Pat them thoroughly dry with paper towels, then season lightly with salt and black pepper.
- Toast the dried chiles: Remove the stems and shake out some of the seeds if you want less heat. Toast the dried chiles briefly in a dry skillet over medium-low heat until fragrant, about 20–30 seconds per side. Do not allow them to burn.
- Soften the chiles: Transfer the toasted chiles to a bowl, cover with hot water, and soak for 10–15 minutes until softened. Drain well.
- Roast the aromatics: Lightly roast or sauté the tomatoes, garlic, and onion until they develop some browned or lightly charred spots. This adds depth and sweetness to the sauce.
- Blend the sauce: Add the softened chiles, tomatoes, garlic, onion, lime juice, cumin, Mexican oregano, smoked paprika, salt, and water or broth to a blender. Blend until smooth.
- Strain if desired: For an extra-smooth restaurant-style sauce, pour the blended mixture through a fine-mesh strainer, pressing with the back of a spoon to extract as much sauce as possible.
- Cook the Diablo sauce: Heat 1 tablespoon olive oil in a large skillet over medium heat. Carefully add the sauce and reduce the heat to medium-low. Simmer for 8–12 minutes, stirring occasionally, until the sauce becomes darker, more aromatic, and slightly thicker.
- Add the shrimp: Increase the heat to medium and add the seasoned shrimp to the sauce in an even layer. Cook for approximately 2–3 minutes on the first side.
- Turn and finish cooking: Flip the shrimp and cook for another 1–2 minutes, or until the shrimp are opaque, pink, juicy, and cooked through. Avoid overcooking.
- Finish with lime: Turn off the heat and squeeze fresh lime juice over the shrimp. Taste the sauce and adjust the salt, lime, or chile heat as needed.
- Garnish and serve: Transfer the shrimp to a serving bowl or plate. Spoon the rich Diablo sauce over the shrimp and garnish with fresh cilantro, lime wedges, and optional sliced green onions or fresh chiles. Serve immediately.
Notes
Control the heat: Use fewer chile de árbol peppers for a milder Diablo sauce and more for extra heat. Guajillo chiles can provide excellent color and flavor with less intense heat.
Dry the shrimp well: Excess moisture can cause the shrimp to steam instead of developing good texture.
Don't burn the chiles: Burnt dried chiles can make the sauce noticeably bitter.
Don't overcook the shrimp: They are ready when opaque and curled into a loose C shape. Tightly curled shrimp are often overcooked.
